Organic Broccoli Pasta


375 g Powlett Hill Spelt penne (or pasta of your choice)
1 head broccoli, cut into small florets
1/2 cup Olive Evolve organic extra virgin olive oil
1/2 cup True Organic grated mozzarella
1-2 tbs Salt of the Earth Celtic Sea Salt
Freshly cracked pepper


  1. Bring a pot of salted water to boil
  2. Add pasta. Cook until water boils again (approx 5 mins)
  3. Add brocooli. Cook until water boils again (approx 10 mins)
  4. Pasta should be al dente and broccoli should be tender
  5. Drain pasta and broccoli, then toss with olive oil
  6. Serve with grated mozzarella and cracked pepper

Broccoli is in season during the winter months, so consider cooking Broccoli soup to keep the winter chills away.
