Organic Maple & Soy Tofu


4 cloves garlic chopped finely
1 small red chilli (no seeds) chopped finely
2 Tablespoons olive oil
250g potatoes - cubed 1-2 cm
250g Earth Source firm tofu - cubed 1-2 cm
1/4 cup Spiral shoyu
1/4 cup Spiral maple syrup
juice 1/2 lime
1/2 cup Savy Organics raw cashews


  1. In a large non-stick pan, saute garlic, ginger and chilli in olive oil for 2 mins on high
  2. Add potatoes and saute until slightly brown (approx 5 mins)
  3. Reduce heat slightly, add nuts and saute for additional 3 minutes
  4. Add tofu and saute until light golden brown
  5. Add maple syrup, soy sauce and lime juice and bring to boil
  6. Reduce heat and simmer until sauce thickens slightly. Add a dash of water if necessary
  7. Serve with brown rice
