Sweet Potato & Lentil Soup


1 tablespoon sunflower oil
1 medium brown onion, diced
1 clove garlic, minced
1 teaspoon Celtic Sea Salt
1 teaspoon black pepper
1 cup Willowvale red lentils
300gm sweet potato, cubed
4-6 cups vegetable stock
Handful chopped parsley, coriander or spring onions


  1. Heat oil in a large saucepan then add onion, garlic, salt, peper and fry over a medium heat until onions are translucent.
  2. Add lentils and sweet potato and pour stock.
  3. Bring to a boil, reduce heat and simmer for about 20 mins until sweet potato is soft.
  4. Simply mash for a chewy texture or blend for a more refined soup.
  5. Garnish with parsley,coriander or spring onions.
  6. Soup tastes great with Red Beard sourdough or potato bread!
